Copyright for joint project

I am part of a voluntary family history society that collects information from gravestones etc and transcribes them for its members research. On some occasions up to 9 persons have collected the information and passed it on to the projects coordinator who has then typed it out into booklet form.
Can you please tell me who actually holds the copyright to the finished material, as there has been no agreement drawn up to specify this.
As I have read up on articles found on the internet the copyright belongs to the person who wrote the material, but does the original copyright belong to the person who's notes were used to compile the book.
