Can anyone clear this up for me?

I have heard that when recording in a recording studio, the owner of the studio holds the copyrights all the recordings.

Is this true?

For example: I write a song and then I go down the street to my friend Joe who has a studio in his basement. I record my work in Joe's studio. Does Joe now own the copyright to that recording, or do I?

Although some of it seems a bit contradictory to me

The UK law says

Authorship and ownership of copyright

Section 9: Authorship of work.

9.-(1) In this Part "author", in relation to a work, means the person who creates it.

(2) That person shall be taken to be-

(aa) in the case of a sound recording, the producer;
