The short and simple answer is that you are not infringing copyright.

Hi,
I've read the rest of the thread, all very useful information.

Would you mind just clarifying something?

I would like to sell book pages as part of a craft pack. I would like to add some pages from Edith Holden, The Country Diary of an Edwardian Lady, very popular among crafters. I will not mention the name of the book or the author in the listings, however, the pages make up months of the year, so would this class as breaking up the narative?

Also I would like to use either cut out bird illustrations or whole pages from a bird non-fiction book. Would this be allowed?

These books have been rescued from going to recycling or landfill, it would be a shame to only use them for personal projects!

hi Clockwork Moth,

The doctrine of exhaustion of rights covers the complete work (eg a book, magazine, CD, vinyl LP) as well as parts of the work, so using individual pages or even parts thereof is equally permissible.

Don't get too hung up on my earlier remark about a continuous narrative. Single illustrations certainly won't be affected by being cut out and framed since the work (that is to say, the piece of artwork) remains intact and unaltered so there can be can't be any disrespectful treatment affecting the artist's moral rights. Similarly if you want to use individual pages of text, that is similar to using the exception for quotation (see section 30 of the Copyright Designs and Patents Act 1988), only in this case as there is no copying, you don't need to worry about providing the author with a credit as you would with a quotation.

That sounds good. Just to clarify though, I'm not actually framing them, I'm selling the pages loose as a pack. I had planned to include some birds I've cut out of the page, which means I have edited them (cut some single birds out from an image of a group of birds) so perhaps it is better to just keep the pages whole for this purpose.
